Hey All, Sorry I have been MIA for so long! I have been busy with life as a first time mother with a 2 year old toddler… one with a lot of energy and super clingy personality… Anyhow, I am able to squeeze sometime into my busy life and started something new. Due to the lack of babysitter today 2-14-2016, we are not doing anything special. The only thing I managed to do was to make a nice meal for lunch. Between my very demanding teething son and all the things we do on weekend, it is impossible to plan anything. At least I did make an effort to do so. Here I give you garlic Rosemary rack of lamb with garlic Rosemary roasted potatoes and roasted asparagus and mushroom in balsamic glaze.
This is great for stir fry, noodle soup or just or it in your rice. I derailed a little bit from the recipe below cause I used a lot more garlic and less chili pepper flakes. I like it mild but still with the kick and family friendly.
Ingredients as follows:
Chili oil recipe
1 cup vegetable oil
1/2 cup dried chilli pepper
5-9 cloves of minced garlic
1/2 teaspoon salt
1/2 tablespoon sugar
1 teaspoon sesame oil
So on saturday I went to sams club with my parents. We came across a little stand of food sampling of tuna salad spread. After tasting it I had to urge to make my own. I grab the ingredients I have on hand and collected some herbs from my backyard. The end result is pretty good. Husband approved too! Thanks to dijorn mustard, siracha and line juice.
